These spelt sourdough pancakes were for breakfast this morning. They are so easy to make. I just mixed 1 cup of spelt flour with 2 tablespoons of my starter, then fermented it overnight. This morning I added an egg, 2 tablespoons of melted butter, 1 tablespoon of sugar, half a teaspoon of salt and 2 teaspoons of baking powder. Then voila, the batter is done! They are so light and fluffy, and of course tummy friendly.
